Production zone: vineyards of Passirano (Valenzano district) and Provaglio (Provezze district) medium hill elevation.
Vines: 80% Chardonnay – 15% Pinot Bianco – 5% Pinot Nero.
Vinification: the grapes are harvested by hand and fermented separately based on the location of the vineyard and the variety of the grape. In spring, the blending of the various wines takes place, thereby creating a unique cuveé. The wine spends at least 18 months on the lees before being disgorged. This one is from the 2016 vintage. The tirage date was March 23, 2017 and it was disgorged on February 27, 2019 so almost 24 months.
Colour : light straw yellow
Perlage: plenty of soft foam, finely grained bubbles, lively and persistent.
Aroma: intense and complex, mature fruits, currants, floral and with a hint of brioche.
Taste: good acidity, full, persistent and well-balanced.
